Agaricus bisporus is a fungus of the mushroom family and the genus
Agaricus, also known as white mushrooms, mushrooms, tricholoma, and
mushrooms. The fruiting body of Agaricus bisporus is medium and
large, with a cap width of 5-12 cm, hemispherical at first, then
flattened, white, smooth, gradually turning yellow when slightly
dry, and the edge is initially involuted. The flesh of the mushroom
is white, thick, slightly reddish after injury, and has a
mushroom-specific smell. Gills initially pink, then brown to dark
brown, dense, narrow, free, unequal length, stipe 4.5-9 cm long,
1.5-3.5 cm thick, white, smooth, silky, subcylindrical, inside Soft
or medium solid, single-layer annulus, white, membranous, middle
part of raw stipe, easy to fall off.
Canned Agaricus bisporus can be opened and eaten immediately, and
has a delicious taste. It is an edible fungus with a large
cultivation scale and a wide cultivation range. Its protein content
is as high as 42% (dry weight), rich in amino acids, nucleotides
and vitamins. Agaricus bisporus is also used medicinally. It
contains a lot of tyrosinase, which is effective in lowering blood
pressure. It can also be made into an auxiliary therapeutic agent
for pneumonia. Some countries have also found broad-spectrum
antibiotics containing anti-cancer substances and anti-bacteria.
Due to the success of deep culture research, people can also use
mushroom mycelium to produce substances such as protein, oxalic
acid and bacterial sugar.
From budding to harvesting, it usually takes 4 to 6 days, depending
on the bed temperature. When the diameter of the cap grows to 2.5-4
cm, it can be harvested. If the mushroom body is too large, the
quality will be affected, and the formation of the next tide
mushroom will also be affected. When picking mushrooms, use your
thumb, index finger, and middle finger to gently pinch the mushroom
cap and rotate it up, and put it into a basket or basket that has
been lined with plastic film. Do not damage the mushroom body. When
the large and small mushrooms are clustered together, the large
mushrooms can be cut off with a knife, leaving the small mushrooms.
If a hole is left when picking mushrooms, the hole should be filled
up with the soil particles left in advance. After harvesting, the
mushroom feet are cut off for sale.
